“In the southeast pocket of Georgia, right off the coast, there is a stretch of barrier islands that runs about a hundred miles long. Along this tucked away oasis hides four historical islands: Sea Island, St. Simons Island, Jekyll Island and Little St. Simons Island.
Colonized by the Spanish and French, with surrounding West African and Haitian influence, The Golden Isles has become a fossil holding time and flavor still. Chef Snyder pays homage to the traditional flavors of his hometown with the modern preparation he has learned since leaving the Golden Isles.”

Foie Gras Chaud Froid: Foie Gras, Honeycrisp Apples, French Toast
Chaud Froid refers to the French cooking method that translates literally to “hot-cold”, where the hot apple coating is poured over the foie gras then set and served cold for a smooth finish. Use your spoon to smash and spread the apple onto the french toast. Pick it up and enjoy.
Shrimp & Grits: California Spot Prawn, Andouille Mousse, Hokkaido Sea Urchin, Crispy Prawn Legs
Snyder’s hometown favorite. This fried grit soufflé adds a modern twist to the famous Southern ingredient, pick up the soufflé and enjoy one bite at a time.
Egg Salad: Barbecued King Crab, Huevos Hilado, Trout Roe, Hollant’s Pikliz
This is a spin on an American original, highlighting a Spanish egg technique paired with the spicy, tart Haitian pickle and smoky, barbecued king crab. The spoon is intended to assist in savoring each detail of diversity.
The Chicken Sandwich: Heritage Farm Chicken Breast, House-made Pork Sausage, Duck Fat Crust, Roasted Chicken aioli
You are welcome to gently heat up your Chicken Sandwich before enjoying. Bake the pastry on a lined baking tray at 350F for 10-15 minutes. Using your spoon, spread the aioli across the chicken sandwich to create mouthfuls of perfection.
Pecan Pie: A timeless southern dessert that we had to include. No rules here, just enjoy.
French Macarons: This Saund & Snyder classic is filled with apple cobbler, to honor the hundreds of cobblers Chef Snyder enjoyed growing up on the Isles.
